Instructions
  1. Heat oil and margarine in a thick bottom saucepan
  2. Add onion, garlic, carrot and celery and cook over a low heat for 4 minutes; mix well
  3. Add the sausage, pepper and parsley; brown over a medium heat for 3 – 4 minutes
  4. Add tomatoes, as well as salt and pepper to taste; cook for 30 minutes, stirring from time to time
  5. Cook the pasta until al dente; drain well
  6. Combine pasta with the sauce and mix well; sprinkle with grated cheese and mix again
  7. Serve hot
